As the fall chill creeps in, warm up with these delicious vanilla chai muffins.
Ingredients:
- 1 cup flour
- ⅓ cup sugar
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup buttermilk
- 2 chai tea bags
- 3 tbsp vegetable oil
- 1 ½ tsp vanilla extract
- 1 egg
- 2 tbsp vanilla sugar
Instructions:
- In a medium bowl, mix together flour, sugar, baking powder, cinnamon, and salt.
- In a small microwave-safe bowl, microwave the buttermilk for 1 minute. Place the tea bags inside and allow them to steep for 10 minutes.
- In the same bowl as the buttermilk, add the vegetable oil, vanilla extract, and egg.
- Pour wet ingredients into dry.
- Stir together until fully combined.
- Cover batter and allow it to rest at room temperature for 30 minutes.
- Preheat oven to 400°F.
- Place cupcake liners into a greased muffin tin.
- Scoop rested batter into liners and sprinkle tops with vanilla sugar.
- Bake for 18 minutes or until golden brown
